80/10/10

I feel much better today than yesterday~ I wasn't as bloated this morning even after i ate. I had grapes for breakfast and coffee. I not sure how much grapes I ate, I just ate until I felt content. Then I had the coffee.

For lunch I was gonna have chinese. I ate it last night and didn't any problems. I instead decided to eat banana wraps instead. I had 2 large bananas wrapped in lettuce with cinnamon

I surprisingly felt content after eating that, so I am gonna avoid cooked food unless I get hungry. I plan on eating the chinese food :) So far 80/10/10 isn't too bad. I have been making small changes. Mainly I will eat fruit first and then if Im still hungry I will eat something else. Im not really measuring yet, but as I go further with this I will to ensure I ma getting enough.

Here are some pics of my belly. This first pic was taken a few days after eating girl scout thin mints. It took almost a week for my stomach to feel better.

Next pic is this morning, a week later exactly. It looks and feels much better, although it does probably show well in the pic.

Chickpea burgers

Delicious! I used:
1 can chickpeas
Handful of snack size carrots
Red onion
2 garlic cloves
Green pepper
1 Jalepeno pepper
Breadcrumbs
1egg

I blended everything together then added the egg then breadcrumbs. I also added curry powder, black pepper, old bay seasoning, and sea salt before I made the patties
Next I heated a pan with olive oil then fried each side for about 4 minutes!

Easy easy easy and soooo good! The real test will be if my family eats them. Lol I know they won't though

Homemade thin mints



Could it be true? I love girl scouts thin mints. Lucky for me, I have a handful of coworkers with daughters that have been selling them every year for the past few years :) I came across an amazingwebsite/blog while on one of my gluten free recipe searches.


I forgot to buy peppermint extract and needed andis peppermint for another recipe, so I just improvised. I melted the chocolate and peppermint together and all was well. I also didn't have parchment paper, so I used foil coated with vegetable oil. Surprisingly, the cookies didn't stick, didn't taste like oil, and weren't too messy lol. I can't lie, the chocolate did melt in my hands a little.

 

Anyways this recipe took about 10 minutes to prepare and 25 minutes to cool. I'm about to go use up the rest of my ritz crackers to make another batch lol

Gluten free?

I've been considering this lately. I think I mentioned before how bloated my stomach gets....this happens no matter what I eat it seems. I made a lot of dietary changes lately and I think gluten elimination needs to be another change.

I cut diary almost 2 years ago after having abdominal pain and terrible gas after eating anything diary related.

Red meat was eliminated last year, it just made me nauseated. I was never a big meat eater anyway, so this was an easy one :)

Fast food and dining out has slowed down too. Im al it's afraid to eat anything I haven't prepared because I dont know how my stomach will handle it

Anyways back to gluten... I have been doing yoga daily, specifically trying to strengthen my core. So far I think I'm doing pretty good but, my stomach still looks like I'm pregnant most of the time :) I can suck the fat in and my little muscle show, I can feel the muscles but the bloating takes over. If I am good on a particular day, my stomach is almost flat!

After some research and pure desperation , I'm considering eliminating gluten! We will see how that goes. I've been reading blogs all day and I've found some amazing recipes :)

Meatball Makeover

The title of this post comes from my main man george lol. Anyways, I found this recipe a month ago or so using my flipboard app. I knew it would come in handy one day. it was very simple to make and was very good to eat. I made it for my friends dinner party. Now this post is called meatball makeover because I needed to dress these bad boys up because originally they just looked like "meatballs in a bowl" lol it looked like it was my leftover dinner, not like a party food. I simply added some tooth picks and garnished with basil. Below are pics and the recipe

over a week!

since my last post????? I am ashamed, I can't even remember what I have been doing lol. Not much has been going on with the hair, I washed it last week and did a braid out. I can really see that my hair is growing. I am in need of a retwist but haven't really felt like doing it. Maybe next weekend.

I have also tried a few recipes over the last week or so. I will type and share those. I made a potato rosemary soup, spicy meatballs, and a banana cake. I have become obsessed with the recipes on my flipboard app and have tried at least one new recipe a week.

Lastly, another reason for my absence is the fact that for the past 2 weeks i worked 3 12hr days in a row! Suprisngly Im not even that tired lol

Happy New Years!




No new years would be complete without making black eyed peas, lol. I usually make them the way my mother has always done (with smoked turkey), but a combination of factors kept me from doing this: i had no meat and didn't feel like going to the store
i wanted to try something *healthier
i wanted to try something different
allrecipes emailed some great ideas, so I couldnt resist lol

Heres what I used
-2 cups black eyed peas
16oz can stewed tomatoes
6 garlic cloves (i like garlic)
half of a small onion
chilli powder, cumin, cajun seasoning, and pepper
1 packet of chicken broth seasoning (thats all i had)

This came out fabulous!!!! I would show an after pic but its not pretty lol.

I just made my first batch of experimental muffins, lol. I started with a basic muffin mix and then tweaked the ingredients. I was shocked they came out very good:)

Raspberry Muffins :)

I wanted to type this up qucikly to share my newest addiction! BAKING!!! I dont know whats gotten into me ,but I have been obsessed with baking. This recipe is for Raspberry Muffins with a streusel topping. This was relatively easy to make and did not require too many crazy ingredients.

They came out great! Especially for my first try. I had to keep them in the oven longer than 20 minutes because they werent quite done. An extra 8 minutes or so did the trick :)

Chef Tiffany

Earlier today I watched a YouTube video on an Indian dish. I thought it looked way enough so I have it a shot. I didn't have all the ingredients so I just used what I had on hand
-curry leaves
-ginger leaves
-couple garlic cloves
-cumin and pepper
- 1 can stewed tomatoes
-2 flounder cut in peices
This was relatively easy and can put pretty good. I had some coconut ginger rice hiding in he cabinet I paired it with. I will have to link the video a little later

rosemary garlic lemon thyme chicken

A mouth full but I don't what else to call it. I got the idea from a coworker, she brought in rosemary clippings from her garden and then shared how she uses it to make an amazing baked chicken. Here's what I used
-4 rosemary springs
1.5 medium sized garlic cloves
handful of lemon thyme
3 cap fulls of olive oil

I used an oven bag of course. The turkey breast was about 8lbs and its been in my freezer since the winter lol.

This was the most juicest flavorful turkey I have ever encountered. I was initially hesitant to not add any seasoning, but im glad I went with my gut. No additional seasoning necessary. My house smells wonderful like I'm some fancy chef! Lol

black eye peas, collard greens, fried chicken!

Happy New Years!!!!! I'm sure this dish is not a suprise to many. This is the traditional black families New Years meal ( at least for my family) I can remember every year my mom made this meal. I was the only kid out of 5 of us that ate it. lol. this is my first year making it all by myself and I did a pretty good job! My kids and and husband didn't eat it but I knew they wouldn't. I enjoyed it because I am following the footsteps of my mother, my late grandma, and great grandmother( still living!)

Scallops, zucchini, tomatoes



i got this recipe from allrecipes.com
i had to try it as soon as i seen it, ava and I ran out to the market and got all the recipes which included
tomatoes, zucchini, garlic, basil, scallops, and olive oil. it was pretty easy to make and it was delicious!
